This mustard base in dry form preserves all the flowery flavors of mustard seed, and allows other uses (pie bases, quiches, marinades, breading). Mustard (condiment) is the result of a natural reaction between water and crushed mustard seeds.
There is nothing to do... nature knows how to do it!
Depending on the temperature, the season, the reaction can take from a few minutes to a few hours. It is a “living” mustard, unpasteurized, that improves over the days.
